I think you may be able to find artificial sinew - or at least 
something that might work in it's place - at a craft store.  I know 
that Hobby Lobby carries a small range of leather-related tools and 
materials from Tandy, including a few spools of leather lace and that 
sort of thing.  If you want to save yourself the hunt, I'd use the 
phone and give them a call, as well as places like Wisconsin Craft 
Market, etc.
